Pastina (Acini di Pepe) alla Vodka

Serving Size: 2-4 servings

Ingredients:
2 tbsp. extra virgin olive oil
1/2 shallot, chopped
4 garlic cloves, minced
2 tbsp. tomato paste
1/4 cup vodka
1 cup acini di pepe or other pastina
2 cups chicken broth
1/4 cup heavy cream
1/3 cup Parmigiano Reggiano, grated
Extra virgin olive oil to finish
Fresh basil for garnish
Salt to taste
Directions:
Heat the olive oil in a large pan and sauté the shallot until soft and translucent, about 3-4 minutes. Add the garlic and sauté for a further 1-2 minutes, until fragrant.
Add the tomato paste and salt to the pan. Stir and let simmer for 2-3 minutes until the tomato paste deepens in color.
Add 1/4 cup of vodka to deglaze. Stir until the vodka has fully evaporated, about 1-2 minutes.
Add the acini di pepe and chicken broth. Bring to a simmer and stir continuously until the pastina is fully cooked. Add more chicken broth if needed.
Once the pastina is fully cooked, remove from heat and stir in the heavy cream and Parmigiano. Add more salt to taste.
Plate and top with a drizzle of extra virgin olive oil, basil and more grated Parmigiano.
