Shrimp Scampi Couscous

Ingredients:
6 oz. pearl couscous
2 tbsp. extra virgin olive oil
4-6 garlic cloves, minced
1/2 lb. shrimp, peeled and deveined
1/4 tsp. crushed red chili flakes
1/3 cup dry white wine
Zest & juice of 1 lemon
2 tbsp. butter
2 tbsp. Italian parsley, finely chopped
Salt to taste
Directions:
Add the pearl couscous to a large pot and cover with cold water. Bring to a boil and cook for 8 minutes, or until just tender. Drain and set aside.
While the couscous is cooking, heat the olive oil in a large pan over medium heat. Add the garlic and cook for 1–2 minutes, until fragrant.
Stir in shrimp, chili flakes, lemon zest, and a pinch of salt. Cook for 1–2 minutes until shrimp begin to turn pink.
Pour in white wine and let simmer gently while the couscous finishes cooking.
Just before adding the couscous, stir in lemon juice and butter until melted.
Add the couscous to the pan and toss ingredients together. Stir in the parsley and more salt to taste.
